Fryer Air Sweet Potato Chicken Bites

These bite-sized Sweet Potato Chicken Bites are flavorful, satisfying and made right in the air fryer for a perfectly crackly (and lighter!) alternative to chicken nuggets!

A cook have a confession. So A cook purchased the air fryer a couple years ago, but A cook really didn't start using it regularly until a few months ago….well now This kitchen is hooked! Not only does it make food perfectly crackly, but it takes less time and is so much easier to clean up. We literally cannot stop using our air fryer and since the two year old daughter is such a fan of nuggets, A cook wanted to m

Yes A cook created these bite-sized treats with the daughter in mind, but let's be honest…the hubby and A cook gobbled them right up! Super flavorful, straightforward to make with just a few simple ingredients, and loaded with fresh herbs and spices that make these taste SO dang good. This recipe is also gluten-free, paleo and Whole 30 compliant!

What goes in

  • 1 pound ground chicken, or turkey
  • 2 cups finely grated sweet potato
  • 2 tablespoons almond flour
  • 1 tablespoon fresh parsley, finely chopped
  • 2 teaspoons fresh thyme, finely chopped (or 1/2 teaspoon dried)
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper

How it comes together

  1. Use a wide bowl, mix together chicken, grated sweet potato, almond flour, parsley, thyme and seasonings. Using a small cookie scoop, form them into balls and flatten them out a bit so that they resemble nuggets. You should get about 24 chicken bites.
  2. To make in the air fryer: Spray the basket of your air fryer with non-stick spray and arrange the chicken bites in a single layer. Depending on the size of your air fryer, you may need to do this in 2 or 3 batches. Set the fryer to 400 degrees and cook for about 13 minutes, flipping them halfway through.
  3. To make in the oven: Arrange chicken bites on a prepared baking sheet lined with parchment paper or non-stick spray and bake in the oven at 400 degrees F for about 25 to 28 minutes, flipping them halfway through. If you want them more crackly, pop the broiler on in the last couple minutes, making sure to watch them closely so that they do not burn.
  4. Serve immediately with your choice dipping sauce and enjoy!

Keep in mind

*These chicken bites will keep in a sealed airtight container in the fridge for up to 4 to 5 days. They will also freeze for up to 3 months.
