One of the favorite guilty pleasures is mashed potatoes. Do not ask me why, but for me growing up it was always an essential side dish with…well, pretty much everything! It wasn't until A cook was older and started making them myself that A cook realized why A cook loved them so much – the mom would put a TON of butter in them! And when A cook say a ton, A cook mean enough to make even Paula Deen cringe.
Yeah A cook may never go back to regular mashed potatoes again.
What goes in
- 1 head cauliflower, chopped
- 1/4 cup chicken stock
- 1 tablespoon plain Greek yogurt
- 1 tablespoon olive oil

- 2 tablespoons grated Parmesan cheese
- 1 wedge Laughing cow cheese
- Pinch of sea salt
- 1/4 teaspoon. pepper
- 1/2 teaspoon. fresh rosemary, chopped
How it comes together
