Yes! Prepare all of the ingredients ahead of time and store them separately. Assemble and add the dressing just before serving for the freshest texture.

What goes in

  • 1/3 cup slivered almonds, toasted
  • 4 cups fresh baby spinach
  • 2 cups fresh arugula
  • 2 cooked chicken breasts, cut into cubes
  • 16 ounces strawberries, hulled and sliced
  • 1 avocado, peeled and diced
  • 1/2 small red onion, thinly sliced
  • 1/3 cup crumbled feta cheese
  • Poppy seed salad dressing

How it comes together

  1. Toast the almonds. In a small skillet over a moderate burner, add the slivered almonds. Toast for 3 to 5 minutes, stirring occasionally, until lightly golden and fragrant. Remove from heat and let cool.
  2. Make the dressing. In a small bowl or jar with a lid, combine olive oil, red wine vinegar, apple cider vinegar, honey, poppy seeds, Dijon mustard, salt and pepper. Whisk or shake until fully combined and emulsified. Hold nearby.
  3. Assemble the salad. Use a wide bowl, add the spinach and arugula. Top with the cooked chicken, sliced strawberries, diced avocado, red onion, toasted almonds and crumbled feta.
  4. Dress and serve. Drizzle the poppy seed dressing over the salad just before serving and toss gently to combine. Serve immediately and enjoy!
