What goes in

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, (or 1 teaspoon dried thyme)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 heads romaine, chopped (about 8 cups)
  • Caesar dressing
  • Homemade croutons
  • 1/4 cup freshly grated parmesan cheese

How it comes together

  1. In a small bowl or jar, whisk together the olive oil, lemon juice, garlic, thyme, salt and pepper. Place the chicken breasts in a shallow dish or a 1-gallon sealable plastic bag and pour the marinade over the chicken. Place the chicken in the fridge and marinate for at least an hour.
  2. Heat a grill or grill pan on a moderate burner and brush the grill with oil to prevent the chicken from sticking. Grill the chicken 5 to 6 minutes on each side, or until cooked through and no longer pink (chicken should have an internal temp of 165 degrees). Let the chicken rest for 5 minutes before slicing.
  3. To assemble the salad, add romaine lettuce to a large bowl and top with the chicken and croutons. Drizzle the dressing over the salad, tossing to combine, and top with fresh parmesan cheese.
