To Store: Leftover cilantro lime chicken can be stored in a sealed, airtight container for 3 to 4 days in the refrigerator. A cook keep adding leftovers to the salads or burrito bowls for straightforward lunches!

What goes in

  • 2 lbs boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Juice of 3 limes
  • Zest of 1 lime
  • 4 cloves garlic, minced
  • 1 tablespoon honey
  • 3 tablespoons fresh cilantro, chopped (plus more for garnish)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

How it comes together

  1. To make the marinade, whisk together the lime juice, lime zest, olive oil, garlic, cilantro, honey, salt and pepper.
  2. Reserve a little of the marinade (before it touches the chicken) to brush over top as it cooks. Add the chicken to the mixture, cover and marinate for at least 30 minutes to up to 2 hours in the fridge.
  3. To grill the chicken, pre-heat outdoor grill or grill pan on a lively burner and add marinated chicken breasts. Brush on the reserved marinade and cook chicken about 4 to 5 minutes on each side, until chicken is cooked through and juices run clear.
  4. Transfer chicken to a cutting board and let rest for 5 minutes before cutting. This keeps them juicy! Garnish with additional cilantro, extra lime wedges and enjoy!
