Lemon & Cinnamon Sweet Potatoes

These Lemon and Cinnamon Sweet Potatoes are super flavorful and straightforward to make coated in the most satisfying maple cinnamon glaze that will keep you coming back for seconds!

So Cooks have been on this new clean eating kick for over a week now and let me just say, it is ahhh-mazing. A cook feel so much healthier, A cook have a ton more energy and the best part is A cook already lost about 5 pounds! Yes granted it is mostly water weight (A cook know…A cook actually cut out diet coke *insert GASP here*) but hey, A cook'll take it!

A cook thought this was going to be a rough transition, but it really hasn't been that bad. A cook plan all the meals a week in advance and have been trying out new recipes almost every night. Why drown your food in heavy sauces filled with disgusting fat and other ingredients you probably cannot pronounce when you have an abundance of herbs, spices and fresh ingredients at your disposal??

What goes in

  • 3 sweet potatoes
  • 1 1/2 cups apple juice
  • 1/3 cup maple syrup
  • 1 teaspoon. nutmeg
  • 1 teaspoon. cinnamon
  • 1 teaspoon. grated lemon zest
  • 1/2 teaspoon. sea salt
  • 3 tablespoons extra virgin olive oil
  • Juice of one half lemon

How it comes together

  1. Preheat oven to 375 degrees F.
  2. Cover sweet potatoes with cold water in a large saucepan and bring to a boil. Reduce heat and allow potatoes to simmer until just tender, about 8 to 10 minutes.
  3. Drain sweet potatoes and hold nearby, allowing to cool. Cut potatoes into 1/4-inch thick slices and lay them in a large baking dish (or a few smaller dishes) coated with cooking spray. Do not overlap potatoes.
  4. Meanwhile, combine apple juice, maple syrup, nutmeg, cinnamon, zest and salt in a medium saucepan. Bring to a boil and then simmer over a gentle burner for about 8 minutes, whisking often.
  5. Add in olive oil and lemon juice and stir until sauce becomes a thick syrup. Pour the warm syrup over the sweet potatoes and place baking dish in the oven for 20 to 25 minutes. Serve immediately, enjoy!
