What goes in

  • 1 cup rolled oats
  • 1 cup shredded apple (about 1 medium apple)
  • 1 1/2 cups almond milk, or milk of choice
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 2 teaspoons chia seeds
  • 1 teaspoon cinnamon or apple pie spice
  • Pinch of nutmeg and salt
  • Peanut butter or other nut butter
  • Fresh cut apple (sprinkled with cinnamon!)
  • Banana slices
  • Nuts or seeds
  • Cacao nibs or chocolate chips

How it comes together

  1. Mix everything together. Add the rolled oats, shredded apple, almond milk, maple syrup, vanilla, chia seeds, cinnamon (or apple pie spice), nutmeg, and a pinch of salt to a mason jar or bowl. Stir well until everything is evenly combined.
  2. Refrigerate overnight. Cover tightly with a lid or plastic wrap and refrigerate for at least 6 hours or overnight. The oats and chia seeds will absorb the liquid and become perfectly silky.
  3. Add your favorite toppings. Before serving, stir the oats well and top with fresh diced apples, peanut butter, chopped pecans, walnuts, banana slices, or even a sprinkle of granola for extra crunch.
  4. Serve and enjoy. You can enjoy this cold straight from the refrigerator, or warm them in the microwave if you prefer a hot breakfast.

Keep in mind

Prepping and Storage: Store apple pie overnight oats in a sealed, airtight container in the refrigerator for up to 2 to 3 days. If the oats become too thick, just stir in a splash of milk before serving. For meal prep, you can easily double or triple the recipe and divide it between individual mason jars.
