Since I started using an Instant Pot, I’ve found it makes kitchen routines much faster and easier. Besides rice and soups, one of my favorite uses is cooking hard boiled eggs — consistently perfect every time. Pressure cooking produces eggs that peel easily and cook evenly, eliminating the guesswork that comes with stove-top boiling.

Why Use an Instant Pot to Hard Boil Eggs?

  • Consistent results – reliable every time without overcooking or undercooking.
  • Easy to peel – pressure helps separate the egg white from the shell, so peeling is faster and cleaner.
  • Hands-free cooking – set the Instant Pot and walk away; no need to watch boiling water.
  • Quick and efficient – the 5-5-5 method (cook, natural release, ice bath) is fast and simple for everyday use.

How to Make Hard Boiled Eggs in the Instant Pot

  1. Add water and arrange eggs. Pour 1 cup of cold water into the inner pot of a 6-quart Instant Pot (or 1 1/2 cups for an 8-quart). Place a metal trivet or steamer rack inside and arrange eggs in a single layer on top.
  2. Lock and set. Close and lock the lid. Set the valve to sealing, choose Manual/High Pressure, and set the timer for 5 minutes.
  3. Prepare an ice bath. While the eggs cook, fill a large bowl with ice and cold water and set it aside.
  4. Natural release then quick release. When the cook time finishes, allow a 5-minute natural pressure release. After 5 minutes, carefully open the valve to release any remaining pressure.
  5. Shock in ice bath. Immediately transfer eggs to the ice bath for 5 minutes. This stops the cooking and makes them easier to peel.

Remember the 5-5-5 method: 5 minutes under high pressure, 5 minutes natural pressure release, then 5 minutes in an ice bath. That’s all it takes for perfect hard boiled eggs.

Want Softer, Jammy Yolks?

For soft- or medium-boiled eggs with jammy yolks, set the Instant Pot to 3 minutes high pressure instead of 5, then follow the same natural release and ice bath steps. Note that the Instant Pot takes several minutes to reach pressure before the cook time begins, so factor that into your schedule.

How Many Eggs Can You Cook at Once?

The Instant Pot can cook a small number or a full dozen with equal success — the number of eggs doesn’t change the cooking time. A single layer of eggs on the trivet is best for even results. A dozen fits comfortably in most 6- or 8-quart models; if you plan to cook more, use a mesh steamer basket for easier handling and transfer to the ice bath.

Why an Ice Bath Matters

An ice bath immediately stops the cooking process, preventing overcooked yolks and helping the shells come off cleanly. Use plenty of ice and cold water; a metal bowl chills quickly but any large bowl will work. Transfer eggs with a slotted spoon or remove the entire steamer basket into the ice bath.

Tips and Tricks

  • Use older eggs – eggs a week or so old peel more easily than very fresh eggs because of a higher pH in the white.
  • Adjust for altitude – at higher elevations, add 1–2 minutes to the cook time if needed.
  • Extra-large eggs – add 1–2 minutes of cook time for extra-large eggs.
  • Avoid overcooking – follow the 5-5-5 method to prevent gray-green yolk rings caused by overcooking.
  • Batch cooking – make a dozen or more for weekly meal prep; they store well and save time.
  • Stop cooking with ice water – the ice bath is essential for texture and easy peeling.

How to Store Hard Boiled Eggs

Peeled or unpeeled hard boiled eggs can be refrigerated for up to one week. Storing them unpeeled keeps them fresher longer. If you peel them, keep them in an airtight container with a damp paper towel to maintain moisture. Do not freeze hard boiled eggs — the texture becomes rubbery and they discolor.
