  • 4 to 5 acorn squash
  • 4 shallots, sliced
  • 3 Tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp ground pepper

For the glaze

  • 1/3 cup honey
  • 1/2 cup apple cider vinegar
  • Pinch of sea salt

For the topping

  • 1/2 cup pomegranate seeds
  • 1/4 cup pine nuts, toasted
  • 1/4 cup fresh mint, chopped

Instructions

  1. Preheat the oven to 400 degrees F (205 degrees C).
  2. Rinse the acorn squash. Using a sharp knife, slice each squash in half lengthwise through the stem and scoop out the seeds and stringy flesh. Slice each half along its natural ridges into pieces about 1/2 to 1 inch thick, depending on squash size. Place the slices in a large bowl.

  5. While the squash is roasting, make the glaze. In a small saucepan combine the honey, apple cider vinegar and a pinch of sea salt.
