To Store: These cute Frankenstein rice krispie cereal treats can be stored in a sealed, airtight container for up to 1 week in the fridge. Before serving, let them sit for a few minutes at room temp so that they soften a bit and enjoy!

What goes in

  • 1/2 cup peanut butter
  • 1/3 cup honey, or maple syrup
  • 1 teaspoon vanilla
  • Pinch of salt
  • A few drops green food coloring
  • 3 cups crispy brown rice cereal
  • Edible candy eyes
  • Pretzel sticks
  • 1 10 ounces bag black candy melts (you won’t use it all)

How it comes together

  1. In a medium saucepan over a gentle burner, mix together peanut butter, honey, vanilla and a pinch of salt until melted and all combined. You could also melt the ingredients in the microwave in 30 second intervals, mixing each time, until all combined.
  2. Turn the heat off the stove and add in a few drops of green food coloring. Whisk together until the mixture is green to your liking. Add in the brown rice cereal, mixing until all combined and cereal is completely coated.
  3. Transfer the rice cereal mixture to an 8×8 baking pan lined with parchment paper (or nonstick spray) and spread the mixture out using a spatula, pressing down to evenly flatten the treats and pack everything down. Make sure to press down firmly so that the mixture is packed and holds together when set.
  4. Cover the pan and place in the fridge for at least 3 hours until treats are set. Carefully remove the treats from the pan and cut into 16 bars.
  5. To decorate, first add black candy melts (or chocolate) in a small bowl and microwave in 30 second intervals, mixing each time, until melted. Cut a small slit at the tip of a plastic baggy or piping bag and add melted candy melts. Slowly pipe the hair and squiggly mouth onto each bar and use the melted chocolate to ‘glue' the candy eyes on.
  6. Trim the pretzel sticks and place them on either side of the bars as the bolts, using the candy melts again as glue. Carefully press them into the bars so they stick. Enjoy!
