Ingredients
- 1 Tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- Salt and pepper, to taste
- 2 cloves garlic, minced
- 2 cups broccoli florets
- 1 red bell pepper, trimmed and cut into 1-inch pieces
- 2 cups fresh pineapple, cubed
- Garnish (optional): sliced green onions and sesame seeds
For the Sauce
- 1/4 cup lower sodium soy sauce
- 1/4 cup pineapple juice
- 1 tsp sesame oil
- 3 Tbsp honey
- 2 tsp fresh grated ginger
Instructions
- Heat a large skillet over medium heat and drizzle in the olive oil. Add the chicken pieces, season with salt and pepper, and sauté until they begin to brown, about 4–5 minutes.
- Add the minced garlic and cook, stirring, for about 30 seconds so the garlic becomes fragrant but not burned.
- Add the broccoli florets, red bell pepper, and cubed pineapple to the skillet. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender and the chicken is cooked through.
- While the skillet cooks, whisk together the soy sauce, pineapple juice, sesame oil, honey, and grated ginger in a small bowl.
- Pour the sauce into the skillet, stir to coat everything evenly, and bring to a gentle simmer. Cook for 1–2 minutes until the sauce slightly thickens and glazes the chicken and vegetables.
- Remove from heat, sprinkle with green onions and sesame seeds if desired, and serve immediately over rice or cauliflower rice.
