Sweet and Spicy Sweet Potato Fries

Ingredients

  • 2 medium sweet potatoes, peeled and cut into fries
  • 2 teaspoons cornstarch
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon chipotle chili powder
  • 1 tablespoon coconut sugar or brown sugar (optional)
  • Sea salt, to taste

Instructions

  • After peeling and cutting the sweet potatoes into sticks, place them in a large bowl and cover with cold water. Soak for about one hour—this helps remove excess starch and improves crisping.
  • Drain the sweet potatoes and pat them dry thoroughly with a clean towel or paper towels. Transfer them to a large sealable plastic bag or a mixing bowl.
  • Add the cornstarch to the fries and shake or toss until each piece is lightly coated and there are no clumps. This light dusting creates a crisp exterior when cooked.
