Making homemade tomato sauce is a must in our kitchen. This version was inspired by the desire to get extra vegetables into a kid-friendly meal: a smooth, flavorful marinara that hides a lot of nutrition but still tastes like classic tomato sauce. It’s vegan, low in added sugar, and loaded with vegetables so it works as a family staple. Use it with pasta, stuffed zucchini, casseroles, meatballs, pizzas, or as a dipping sauce.

Why We Love This Sauce

This sauce blends down into a smooth, silky marinara, so it’s great for picky eaters who avoid visible veggie chunks. Carrots and onions bring natural sweetness while zucchini, bell pepper and celery add depth and body. Because the vegetables are cooked and then puréed into the tomatoes, the flavor becomes integrated and rich rather than just “vegetables in tomato sauce.” The recipe is versatile: make it chunky if you prefer, or purée it completely for a classic smooth marinara.

How to Make Loaded Veggie Tomato Sauce

  1. Prep the vegetables. Finely chop the onions, carrots, celery, bell peppers, and zucchini so they soften quickly and blend smoothly.
  2. Sauté aromatics. Heat olive oil in a large saucepan or Dutch oven over medium heat. Add the onions and carrots and cook for about 2 minutes until they begin to soften. Add the garlic and sauté for another 30 seconds.
  3. Add remaining vegetables and seasonings. Stir in the celery, bell peppers, zucchini, Italian seasoning, crushed red pepper (if using), salt, and pepper. Cook, stirring occasionally, until all vegetables are tender, about 10–12 minutes. Avoid browning too much; you want the vegetables soft, not charred.
  4. Build the sauce. Mix in the tomato paste and cook for 1–2 minutes to deepen the flavor. Add the canned tomatoes (crush them with a spoon if whole), vegetable broth, and balsamic vinegar. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 45–60 minutes to meld flavors.
  5. Blend to finish. Use an immersion blender to purée the sauce until smooth. If you prefer a chunky sauce, pulse just a few times until you reach the desired texture. If using a countertop blender, work in batches and be careful with hot liquid.
  6. Adjust and serve. Taste and adjust salt, pepper, or acidity (a splash more vinegar if it needs brightness). Serve warm over pasta, use it on pizza, toss with meatballs, or spoon over baked vegetables. Garnish with fresh basil if desired.

Tip: Blending the sauce gives a silky texture and helps hide vegetables for picky eaters. If you want a chunkier, rustic marinara, simply skip the purée step or lightly mash some of the vegetables.

Can I Add Meat?

Yes. For a bolognese-style sauce, brown 1–2 pounds of ground beef, turkey, or Italian sausage before adding the tomato paste. Drain excess fat if needed, then continue with the recipe. Stir the cooked meat into the sauce once it’s simmered and blended for added protein and savory depth.

Prepping and Storage

To store: Cool completely, then refrigerate in an airtight container for up to 5 days. The sauce makes a large batch, so portion it into smaller jars or containers for easy reheating.

To freeze: Freeze in jars or heavy-duty freezer bags for up to 3 months. Thaw overnight in the refrigerator before reheating.

To reheat: Thaw in the refrigerator if frozen, then warm in a saucepan over medium-low heat, stirring occasionally until heated through. Add a splash of broth or water if it has thickened too much.

How to Serve

  • Classic pasta sauce over your favorite noodles with fresh basil.
  • Spread on pizza dough as a rich tomato base.
  • Use in casseroles like meatball or pizza-style bakes.
  • Spoon over roasted or baked vegetables such as eggplant or zucchini boats.
  • Serve as a dipping sauce for chicken tenders or breaded bites.

Serving details: Prep time about 10 minutes, cook time about 1 hour, total time roughly 1 hour 10 minutes. This recipe yields about 16 half-cup servings.
