  • 4 boneless, skinless chicken breasts
  • 1/2 cup canned coconut milk
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced or pressed

  • 1 Tbsp fresh ginger, grated

  • 1 Tbsp fresh lime juice

Instructions

  1. Place the chicken breasts in a large zip-top bag or a bowl.
  2. Whisk together the coconut milk, olive oil, garlic, turmeric, grated ginger, coriander, cumin, salt, and lime juice until well combined.
  3. Pour the marinade over the chicken so each piece is fully coated. Seal the bag or cover the bowl and refrigerate. Marinate for at least 1–2 hours, or preferably overnight for best flavor.
