Ingredients
- 3 Tbsp light brown sugar
- 2 tsp fresh thyme, chopped (divided)
- 3/4 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper (omit for kids)
- 1/2 cup pecans
- 1/2 cup blanched almonds (see note below)
- 1 1/2 Tbsp butter
- 3 cups tiny unsalted pretzels
- 1 cup Rice Chex
- 2 Tbsp pure maple syrup
Instructions
- Preheat the oven to 350°F (175°C). In a small bowl, whisk together the brown sugar, 1 teaspoon of the chopped thyme, salt, cinnamon and cayenne pepper. Set this spice-sugar mix aside.
- To blanch almonds: place whole almonds in a small bowl, pour boiling water over them to cover just above the nuts, and let sit for one minute. Drain, rinse with cold water, and slip off the skins. Pat dry before using.
- Spread the blanched almonds and pecans on a baking sheet and toast in the oven for about 10 minutes, watching carefully so they do not burn. Remove and let cool slightly.
- In a medium bowl, combine the toasted nuts with the butter while the butter is still warm so it melts and coats the nuts. Gently stir in the pretzels, Rice Chex and maple syrup until everything is evenly mixed.
- Sprinkle the sugar-spice mixture over the pretzel mixture and toss gently to coat evenly. Spread the entire mixture in a single layer on a baking sheet.
- Bake at 350°F for about 10 minutes, stirring once halfway through to ensure even browning and coating. Remove from the oven and sprinkle with the remaining teaspoon of fresh thyme. Allow the mix to cool completely before serving or storing.
Tips and Variations
