When I think back, I am incredibly grateful that a random accident that sent me to the emergency room made me notice the spot at all. Those kinds of coincidences can be life-changing. Ingredients
- 30 cherry tomatoes
- 30 small mozzarella balls (bocconcini), patted dry
- 30 fresh basil leaves
- Freshly ground black pepper, to taste
- Balsamic vinegar or balsamic reduction for drizzling
- About 30 six-inch bamboo skewers or toothpicks
Instructions
- Prepare ingredients: rinse the cherry tomatoes and basil leaves, and pat the mozzarella balls dry with a paper towel so they won’t water down the dish.
- Assemble skewers: using 6-inch bamboo skewers or sturdy toothpicks, thread a cherry tomato first, then a folded or whole basil leaf, followed by a mozzarella ball. If basil leaves are large, fold them or use smaller leaves so the bite is balanced.
- Repeat until you have the desired number of skewers, then arrange them on a platter in a single layer so they look inviting.
- Season: lightly sprinkle freshly ground black pepper over the skewers. Salt is optional — if your mozzarella is salted, you may not need any additional salt.
- Finish with balsamic: either serve a small bowl of balsamic vinegar for guests to dip, or drizzle balsamic vinegar (or a thicker balsamic reduction) over the skewers just before serving. Drizzling right before serving prevents the basil from wilting and keeps the presentation fresh.
- Serve immediately and enjoy.
